Italian Traditions
During a few months in summer I had the good fortune to work closely with one Stockholms highly successful Italian Restaurants "Panne Fresco" if was one of the few times that I have had a close working relationship with a fully functional Italian restaurant, not only was the food authentic, the staff were mostly Italian and the spoken language Italian as well as the food checks.

Affettati misti,
 mixed cold cuts prosciutto, mortadella, napoli & ventraccini salami together with olives, tapenade, truffle mayonnaise, pickled vegetables artichokes and smoked provola cheese, a great starter and favourite among the guests.

Pickled broccoli leaves and small flourettes "frianjelli" from the Napoli area one of many special products directly imported to give authenticity to taste and presentation the frianjelli was used on the carrettiaierna pizza.

Cappricciossa Pizza Napolian style, an extremely hot wood fired pizza oven pumped out Authentic Napolitan style pizzas all day
Panne fresco is an all day meeting place with a big selection of gelato and Italian style pastries in their cafe.

Gnocchi alla Sorrentina, simple and fast gnocchi served with tomato sauce & mozzarella 

Grigliata mista, mixed grill for 2 served on a plank ox fillet, chicken breast and fresh salsiccia served with pesto mixed vegetables and extras 

Nutella pizza roll, this ones for the real sweet cravers or split among the table with ice cream as a dessert

penne alla Aldo, penne pasta with mushrooms in cream sauce & flavoured with cognac. 
Panne Frescos focus on authentic Italian products was an inspiration to see and work with, their dedication to Italy and its food culture shone through as a "this is the attitude and commitment needed" when opening an ethnic restaurant in a foreign country.
