26 of May we hosted the inaugrual cheese lab master class workshop at Piteå Havsbad,  we were seventeen chefs from Piteå Havsbads grupp. 


Part of the cheese selection used in the masterclass, classic Swedish hard cheeses and a couple of Danes, the star of the show was the 24 month old Svecia, Svecia is the onlt DOC certificated swedish cheeese


 Svecia terrine with leeks and roasted apples baked in parma ham and rolled in chopped olives, this was my favorite, great contrasts between the apples and Svecia
