Here's Jay McCarthy, from Group 970 in Vail, Colarado at Quality Hotel Friends in Stockholm. Jay was in town doing a presentation of lesser known American beef cuts in conjunction with MetaFoods, Dafgård and Omaha beef from Nebraska.
Jay put together a relaxed and informative presentation built on his excelent knowledge of prime grain fed beef, He presented the different beef cuts for example, clod, tri tip, shoulder tender, flat iron steak round steak, chuck flat and a number of other tender cuts, many of these cuts are new to us here in Sweden.
Practical tips on how he uses these cuts at the Beaver Creek Chophouse in Vail, his other restaurants, anctedotes and general chefs bantering kept us entertained and interested.
It will be interesting to see how many of these "new" cuts start to appear on local stockholm menu's.
